Making breakfast ahead of time

I had been looking to make breakfasts ahead of time for a while.
Something they could just warm up.
I make chocolate chip pancakes in advance and they go down pretty well.

I decided to make some breakfast sandwiches
Firstly I had to go and make some breakfast sausage.

I decided to make these with English Muffins.

What you'll need

breakfast sausage:
pork and chicken mince/ground meat
thyme ~ 1 teaspoon
oregano ~ 1 teaspoon
mustard powder ~ 1 teaspoon
ground sage ~ 1 teaspoon
ground chili ~ 1 teaspoon
ground black pepper
salt
maple syrup  ~ 1/4 cup

Baked eggs
eggs ~ 8 eggs
milk  ~ 1 cup
flour ~ 1/3
pinch of salt

English muffins

for the sausage, mix the meat, all the seasonings and maple syrup
mix well.
make patties and bake until cooked through
I baked these for about 30 minutes @ 350/180 degrees

for the eggs
in a bowl put the  eggs, milk and flour and mix well
pour into a pan lined with baking paper and bake until cooked through
I baked these for about 20 minutes at 180 degrees
When cooked, cut into desired size straight away

Toast the muffins
Build the sandwiches
when the sandwiches are cooled/cold
Wrap up in foil and freeze until needed

I warm these in the microwave for about 3  minutes
That's my microwave, yours might need a bit longer or shorter amount of time




What you'll need

pork and chicken minced/ground

Thyme, oregano, salt, pepper, mustard, chili

Add the maple syrup

mix well

make into patties
Mine could do some work :)
Bake in the oven until cooked through

add eggs, milk and flour
mix well

pour into a a jelly roll/cookie tray
which is lined with baking paper
and bake until cooked through 


While everything is cooking
with the left over meat mix
make patties and separate with waxed paper
place in a bag and freeze until needed

cut the egg roll into large squares
This is the back of the roll hence the wiggly lines
from the paper

toast the muffins

let the sausage cool

build your sandwiches

wrap in foil
and freeze
The one with 'J' is the one without egg for my son
