Chicken Rainbow Salad with Peanut Dressing

Chicken Rainbow salad with Peanut dressing
Salads can be sooooo boring!
This one really is not and it does taste great!!
Hubby is happy to eat and does not move it around the plate like….why do I have this many veggies on my plate :)
You can use anything you want in this for the salad.
Just the more colourful the the nicer I think it looks.
I used the shredded chicken that I had showed you in my last post.
For the salad ~ I used
shredded Chicken
Red cabbage
white cabbage
mango
snow pea/ mange toute
red onion
Fresh Coriander/Cilantro
carrot
celery
cucumber
red pepper
chopped roasted peanuts
I think that was all I used smile emoticon
for the Peanut sauce
crunchy peanut putter ~ 2 - 2 1/2 tablespoons
rice vinegar ~ 1 tablespoon
soya sauce ~ 1 tablespoon
Honey ~ 1 tablespoon
Hot Water 1-2 tablespoon
chili flakes ~ good pinch
lemon juice ~ half a lemon
sesame oil ~ 1/4 teaspoon
This does not make a lot of dressing. I would Double the recipe for 4 people plus.
Put everything in a jug and warm up in the microwave. for 30-45 seconds. Take out and mix well.
I have a salad dressing bottle with a lid so I just shake it really well.
Peel and chop all your veggies of YOUR choice for the salad.
add the chicken and mix well

Pour over your salad garnish with the chopped peanuts  and enjoy!
