Coconut curry shrimp
While walking around the Friday market I seen they had lovely fresh prawns, Shelled and deveined...So these we bought with no idea how I would cook them.
I found a few recipes and decided to tweak them a little bit smile emoticon
This is a lovely dish that's easy to make and the sauce is at a level for everyone.
It's not a curry as I wouldn't even consider it a mild curry dish.
It's more of a fragrant coconut shrimp dish
What you'll need 
Shrimp/Prawns Deveined ~ I used about 2 cups
Tomatos diced ~ 1 cup
Shallots chopped ~ 1/2 cup
frozen peas ~ 1 cup
Milk ~ 1/2 cup
cooking cream/single cream 1/2 cup
coconut milk ~ 1 can
Garlic ~ 1 clove minced/diced
fresh grated ginger ~ 1 teaspoon
sugar ~ 1 tablespoon
Curry powder ~ 1 1/2 tablespoons
chili powder ~ 1 tablespoon
Turmeric ~ 1 tablespoon
potato peeled and cubed ~ 1 cup
Tomato paste ~ 1 tablespoon
salt and pepper ~ a pinch
oil ~1 tablespoon
In a pan add the oil, add the curry powder, and garlic and ginger
add the shallots and potatoes and mix well and until the shallots are soft.
add the milk and cream mix and the coconut milk, mix well and
add the tomatoes, sugar, chili and turmeric.
Again mix well.
cook on a low~ ish heat for about 10 minutes 
Add the shrimp and stir well 
add the pan lid and cover and cook for about 30~40 minutes on a low heat.
After cooking for about 20 minutes add the frozen peas 
I served this over Jasmine rice

Potato salad
I love this potato salad recipe.
it's really easy, VERY tasty and so easy
I needed to find a potato salad recipe without the mayo. 
What you'll need
Baby potatoes, cut in half
red onion cut in slices ~ 1 cup
coriander seeds ~ 1 tablespoon
ground cumin ~ a pinch
oregano ~ 1 tablespoon
Extra Virgin ~ 1/4 cup
red wine vinegar ~ 1 tablespoon
salt and pepper ~ a pinch of each
fresh coriander/cilantro ~ 1/4 cup
red chili, finely chopped 1 teaspoon
oil for cooking the onions
wash and cut the potatoes and cook
when cooked drain and leave to cool slightly
Toast the the coriander seeds and the pinch of cumin, but don't let them burn. after a few minutes add the oregano and mix and leave to het for another minute
add to a bowl and add the oil, vinegar and a salt and pepper
add some a little oil to a pan and cook the onions until soft and slight caramelized remove from heat and leave to cool 
When the potatoes have cooled slightly add them to bowl with the oil mixture. Making sure the bowl is big enough for mixing the oil mix and potatoes
Then add the coriander/cilantro minced chili and red onion and mix well.

Not your usual Tiramisu

Not your usual Tiramisu 
Family friendly version of Tiramisu
So Basketball training has started and quick and easy but filling and tasty is in order smile emoticon
It's not very often that I post a recipe with cheese, but J really like's tiramisu smile emoticon
It's very rare we have coffee in our house. People have even brought coffee wink emoticon So I wanted to try and make this without coffee
Was it a hit? it was a BIG hit smile emoticon
I read recipes with eggs yolks needed and alcohol
This all sounded difficult 
What you'll need
chocolate milk ~ 1 cup (I made this with Dutch unsweetened coco)
packet of lady fingers
Mascapone cheese ~ 1 1/2 cup
whipped cream ~ 1 1/2 cup
chocolate for grating 
soaked the lady fingers in the chocolate milk
whip the cream, (you can use sweetened cream)
and the mascapone together until all was mixed well and firm 
place the lady fingers in the bottom of your dish
spoon the cream and mascapone mix onto the soaked lady fingers and spread it out equally.
add another level of the chocolate soaked lady fingers
top with the remaining cream and mascapone mix
top of with grated chocolate smile emoticon
Place in the fridge until ready to serve

Brown Sugar Pork Chops

Brown sugar pork chops
I had the pork already to make dinner and realized I had not left enough time to make the recipe I had intended.
This is a quick and easy smile emoticon so a bonus!
I also had all the ingredients. extra bonus!
What you'll need
pork chops (with or without bone)
brown sugar ~ 2 tablespoons
Ketchup ~ 2 tablespoons
soya sauce ~ 1 tablespoon
Worcestershire sauce ~ 1 tablespoon
juice of half a lemon
Mix the brown sugar, ketchup, soya sauce and worcestershire sauce well in a dish
Smoother the pork with the sauce. leave for a little while.
In a hot non stick pan add the chops.
keep turning over and adding whats left of the sauce.
