I wanted dinner to something different last night :)
So I made Chicken Marsala and it was good!

I really should make it more often, whenever I make it there is clean plates all around.
From now on I'll be making this at least once a month :)
Some people serve this with pasta and some garlic mashed potatoes.
We had this with garlic mashed red skinned potatoes and green beans :)
The mushrooms where cut up large enough so I could make sure none where on the non mushroom eaters plate :)
What you'll need
Boneless and skinless chicken thighs
mushrooms, peeled and sliced
shallots, chopped (I used 3 small ones)
Marsala wine 3/4
chicken stock 1 1/2 cup ( I made with stock cubes)
corn starch 1/2 cup
butter
salt and pepper
In a bowl mix the corn starch and salt and pepper
Melt the butter in a pan.
Then coat the chicken in the seasoned corn starch
Then add the chicken.
Cook until chicken is browned and cooked through.
when cooked removed from the pan
DON'T clean the pan!
Add the shallots, when almost cooked add the mushrooms
Then add the chicken stock and then the Marsala wine.
stir well…Then bring the sauce to a boil then turn down low.
The sauce will thicken.
Then add the chicken back to the pan.
Spoon the sauce over the chicken and cook for about 10 minutes more

Melt the butter |
Season the corn starch with salt and pepper |
coat the chicken with the seasoned corn starch |
Cook the chicken in the melted butter |
Brown the chicken and make sure the chicken is cooked through |
remove the chicken from the pan |
DON'T clean the pan, add the shallot's |
When the shallot's are almost cooked add the mushrooms |
add the chicken stock |
add the Marsala wine |
bring to a boil, then when boiling turn down to reduce the sauce |
re~add the chicken, spooning some of the sauce over the chicken and cook for a further 10 minutes |
Served with garlic red skinned potato mash and green beans |
