Buttermilk Honey Maple Cornbread

        Buttermilk honey maple cornbread

I have had cornbread and I made cornbread over the years some we good, some were ok.

One of my favourites was when we were in New Hampshire  at a 4th of July BBQ
I wanted to try and make the same type. I've never been able to replicate it
Like I said I have tried cornbread kind of come close. Then I made this cornbread and its at the top of my list to make when I need to whip up extra sides

This is by far my favourite.  It is is on the sweet side.
I also like it as it is made with cornmeal and no added corn

Great with chili or at for a  BBQ or just a side dish.
This is also a great leftover snack


What you'll need

butter ~ 1/2 cup, melted
honey ~ 1/2 cup
sugar ~ 1/3 cup
eggs ~ 2
butter milk ~ 1 cup
flour plain/all purpose ~ 1 cup + 2 tablespoons
cornmeal ~ 1 cup
salt ~ 1/2 teaspoon
baking soda ~ 1/2 teaspoon
maple syrup ~ 1/4 cup

preheat oven to 190°c/375°f

in a bowl add the melted butter, honey, sugar and mix well
add the eggs  and cornmeal and continue to mix until mixture is completely mixed together

in another bowl, mix the flour, cornmeal, salt and baking soda, mix together making sure it all mixed together

add the wet ingredients into the cornmeal mix
the mix will be lumpy
stir the mixture until completely blended together


Grease an 8x8  pan

pour the mix into the prepared pan

bake for 20 - 25 minutes.
After 18 minutes I placed a piece of foil over the pan and cooked for a futher 5 minutes

You'll know it is cooked when you put a knife into the cornbread and it comes out clean

when removed from the oven, pour over maple syrup and spread with a pastry brush, leave to cool.

Buttermilk chocolate bread muffins

I'm back in my kitchen and almost loving being back.
The big problem is the jet lag. I'm not being very successful at getting ver the jet lag

So....TS has asked for some chicken tenders and I always make my tenders with buttermilk
problem is I don't always get to use up all the buttermilk. I'd thought about making cornbread but I decided I'd make that in the week.
Then I decided that I wanted to maybe do some baking and freezing some.
I decided to start with some Buttermilk Chocolate bread Muffins

These are always a hit and freeze great!

What you'll need 

All purpose/plain flour ~ 2 cups
Dutch coco powder ~ 1/2 cup (less sweet)
Baking powder ~ 2 teaspoons
salt ~ 1/2 teaspoon

Eggs ~ 2
sugar ~ 1/2 cup
buttermilk ~ 1 cup
olive oil ~ 1/3 cup
Vanilla Extract ~ 1 teaspoon
chocolate chopped ~ 200grams (I used 2 x 100g bars one dark chocolate one white chocolate) This just under 1 and 1/4 cups

Preheat oven to 180°C/350°F
line muffin pans

In a bowl beat the eggs and sugars
add the buttermilk, olive oil and vanilla extract and milk well

in another bowl add the flour, baking powder, salt and coco powder and mix well

Sieve the flour and coco mix into the wet ingredients
mix well

fold in the chopped chocolate

fill the muffin liners up about 3/4 of the way

Bake in the oven for 18-22 minutes

Leave for a few minutes then remove from muffin pan and leave to cool on a cooling rack

Dry Rub Baked Chicken Wings (Gluten Free)

         Dry Rubbed Baked Chicken Wings 
                                                                (Gluten Free)





We have gone a little chicken wing crazy in our house.
TH and TS never say no to these.

Wings in our house are ALWAYS baked.
I find baking them less time consuming! Throw them in the oven and then you have 30 minutes until the oven pings to let you know they are done.

With so many different flavours to try, so less time consuming than other.

I wanted to make a flavour that didn't really need a dip or sauce to go with it

What you'll need

chicken wings ~ 2lbs/1 kg Washed and dried
olive oil ~ 1 tablespoon
smoked paprika ~ 1 teaspoon
ground cumin ~ 1/3 teaspoon
onion powder ~ 1 teaspoon
garlic powder ~ 1 teaspoon
cayenne powder ~ 1 teaspoon
chili powder ~ 1 teaspoon
salt ~ 1/4 teaspoon
pepper ~ 1/4 teaspoon

preheat oven to 180°c/350°f

Wash and dry the wings

add the oil to the chicken wings, making sure they are coated

mix the seasoning together

pour half the mixture over the wings
mixing well
add the rest of the seasoning and keep mixing

place the wings on an oven prove rack

** I only had my turkey tray rack and made them fit**

bake for 20 minutes
remove from oven and turn the wings over
place under the broiler/grill at the lowest setting for 10 minutes
