Baked Sweet and Sour Chicken

                                          Baked Sweet and Sour
                                  Chicken 



This is one of our favorite meals.
I don't make it very often, but when I do its a hit :)

Does it taste like takeout food? NO!
But it does taste good!

You have to be careful not to over cook this.
Because its pretty much a throw it in the oven and leave it
Well you leave it until half way through the cooking time and then give it a little stir.


What you'll need

Chicken breast, cut in cubes
corn starch ~ 1 cup
eggs, beaten ~ 2
oil ~ 1/4 cup
salt and pepper

What you'll need for the sauce

sugar ~ 3/4 cup
apple cider vinegar ~ 1/2 cup ( you can use plain white vinegar instead of apple cider vinegar)
ketchup/tomato sauce ~ 4 tablespoons
soya sauce ~ 1 tablespoon
garlic powder ~ 1 teaspoon
pinch of pepper

Preheat the oven to 350/180 degrees

Season the chicken with salt and pepper.
Coat the chicken with the corn starch, I find throwing all in a bowl the easiest
When all the chicken is covered, dip the chicken into the beaten egg, or do what I do  just throw it all in.
Making sure the chicken is all coated

Heat the oil in a pan, add the chicken and cook about a minute or so each side
YOUR NOT LOOKING TO COOKING THE CHICKEN RIGHT THE WAY THROUGH AT THIS STAGE.

Line a plate with kitchen paper and remove  the chicken  from the pan onto the paper.

In a bowl mix the sugar, apple cider, ketchup, soya sauce, garlic powder and pepper
Mix well

Add the chicken to an oven proof.
Pour the sauce over and stir well, coating all the chicken

cook for 50~55 minutes , stirring half way through

I serve this with plain boiled white rice
